Time for a bit of Easter baking! I saw these Easter nests on Megan's blog two years ago, and have wanted to try them since. I think, in the last year, I've really gotten in to my baking, and so, this year I decided to try them. They were a really quick and easy treat to make, so hats off to Megan for the original recipe.
You will need:
For the cakes: 110g self-raising flour
110g Caster sugar
110g butter
2 large eggs
4 tablespoons cocoa powder
1 teaspoon baking powder
A splash of vanilla
A splash of milk
For the icing: 75g milk chocolate
200g icing sugar
2 tablespoons cocoa powder
A splash of milk
For the nests: 5 Shredded Wheats
300g chocolate
Mini Eggs for decoration
1. Preheat the oven to 160C/Gas Mark 3.
2. Put all of the cake ingredients into a large bowl and mix until fluffy. If it is stodgy, add a bit more milk. Place the mix into cupcake cases and bake in the oven for 20-25 minutes. Leave to cool.
3. To make the icing, melt the chocolate and mix with the icing sugar, cocoa powder and milk whilst still hot to create quite a thick icing.
4. Crush up the Shredded Wheat in the packets. Melt the chocolate for the nests in the microwave, add the Shredded Wheat and mix together. Spoon onto the cakes and create a little hollow at the top for the mini eggs.
And there you have it, perfect little Easter treats.
