The Great Blogger Bake Off Episode Five: Pies & Tarts



When I deleted my old blog, I never thought anything about all my old The Great Blogger Bake Off recipes; I might have to do a catch up of them.

When I first found out that it was pie week on GBBO this week, I was stuck for a recipe. I don't really think of savoury pies as baking for some reason, I lump them in with cooking. So savoury pie was out. Then I thought I'd make lemon meringue pie (which I do not like). And then I remembered I'd had a slice of key lime pie at a housewarming party a couple of weeks ago, and it was that delicious that I knew I'd have to try making one. So, for pie week, I have done. Just so you all know, I'm participating in I Love Crafty's Great Blogger Bake Off, in which we all bake along with the Great British Bake Off.


For my glittery Key Lime pie, you will need:
300g digestives
4 limes
300ml double cream
150g butter (melted)
A 397g tin of condensed milk
3 medium egg yolks
2 tablespoons icing sugar
Pink glitter

1. Preheat the oven to 160C (fan 140C)/Gas Mark 3. Put your biscuits in a strong plastic bag and bash them up until they are crumbs with a rolling pin. Or use a food processor, whatever you prefer. Mix with the melted butter and press into the base of a tin. Bake for 10 minutes and then cool.


2. Whilst the base is cooling, put the egg yolks into a large bowl and whisk for a minute. Add the condensed milk and whisk for another three minutes. Squeeze the juice of the four limes into the mix, and add some zest from each lime, then whisk again for another three minutes. Pour onto the base (check it's cooled down first though), and bake for another 20 minutes.

3. Cool then chill for at least three hours.

4. To make the decoration, whip the cream and icing sugar together until quite thick. Spread onto the chilled pie and then sprinkle on some pink glitter to make it really girly.

  3. I love key lime pie, although I don't think I've ever had a homemade one. It can only taste even better so I'll definitely need to try this soon! x
